Brighly perfumed of rich strawberries, raspberries, rhubarb and watermelon. A sip is juicy, mouth-filling and tasting of dark cherries and other red berry fruits, pomegranate and Granny Smith apple. The finish is long and fresh. Composition: 47% cabernet franc, 46% gamay and 7% pinot noir. Pressed from grapes grown specifically for this wine, picked as grape sugars averaged 21.2° Brix. The berries were destemmed, crushed, and sent to tank. The mixture of crushed grapes and free-run juice cold-soaked for between two and twelve hours before pressing. Cold-fermentation and stabilization were completed in stainless steel before bottling.
